The Month of October

Hear ye, hear ye! The princess Aurora has awakened!

Well, I finally got to be Princess Aurora for Halloween this year, my dream came true after all these many years. Thanks to the help of my awesome friend Kristy! Thanks Kristy. This woman sowed my dress in 4 days. Amazing! Parker dressed up as Fabio (with hairy chest added). I personally think Fabio, being the manly man he is, needs a hairy chest. But that's just me. :) Halloween was a blast! Ilonka and Jerrett dressed up as Peanut and Plain M&M's, for which they won best costume couple. It was our ward fall festival/chili cook-off/primary carnival. I did the face painting station. I was a little nervous, since I have never painted children's faces before. But things went great! I might even go into business. :)

Earlier in the month we went to Witches Night Out at Gardener Village for Aunt Carol's and Blake's (cousin Blake, that is) birthdays. What a chaotic night that was! There were literally hundreds of women and men (but mostly women) dressed up as witches! My family had to regroup every 25 ft just to make sure we were all still together. Needless to say we didn't stay there very long. We still had fun like always though. Here are a few pictures from Halloween and Witches Night Out!

A much needed update!

As usual with all that goes on in my life, I forget to update my blog and let you all know what in the world we are up to over here in Priceville! As many of you know Parker and I took a fabulous trip to the tropical destination of Hawaii! We went with Parker's family and were gone from the 6th of June to the 21st. What a trip it was! We first went on a seven day cruise to the islands. We hit Maui, the big island of Hawaii, Oahu, and Kauai. Then the next week after that we were at the Price's time share condo on Kauai (my favorite island).

Here are a few of the things we did while on our vacation: We got to ride scooters on Kona (in the rain, and we got drenched!), kayaked up the Wialua River and hiked to a waterfall, hiked the Nepali coast, snorkeled with the fishes, went to the Polynesian Cultural Center, went to Pearl Harbor, laid out on many a beach, swam in the ocean, ate lots of shaved ice, watched Parker paddle board and boggy board as well as jump off cliffs and rope swings, we ate delicious food, and of course shopped A LOT...almost too much. Yeah, it was too much. Good thing vacations like that one only come once in a long while. If not, we'd be homeless! :) Needless to say we had a great time, and as an added bonus I got a pretty nice tan, which has now mostly faded. Oh-well. It was nice while it lasted anyway.
We have enjoyed our summer thus far. My health has still been on a rocky road, but through Parker's support he helps me keep a positive attitude.
I know heaven will help me find answers and help. I guess I just need to be patient and continually prayerful. I will be going to a new doctor on August 26th to see what he thinks. Perhaps I'll add him to my exclusive team of specialists. He'll have to prove himself worthy first. :) I'll let you know if he makes the cut. lol!

Parker is busy with work and also working on adding on his multi-engine rating/certification. He's flying out tomorrow bright and early to fly some executives down to Phoenix with his friend Jaren, (of whom has the plane and also whose clients these are). Jaren wants his clients to get to know Parker so that they will trust him to fly them places in the future.
It's a opportunity that Parker is excited about. We hope he can get his rating quickly so he can earn a little money by flying these gentlemen around.
So that is the latest!!! Coming soon: my post from our July Birthday Bash! So check in again in a few days to see the madness! :)
Much love to you all!
Lindsay Lou

Zucchini Pizza!

Last night I made a pretty yummy dinner that turned out fabulous! If you like zucchini, hamburger, and cheese you will love this! It is very family friendly for sure. I halfed the recipe since it is only Parker and I, but we gobbled up about 90% of it, and I just had the last 10% for lunch...which wasn't much at all...which means I'm still hungry. This also means that even for leftovers it's still good! So here's the recipe!

Zucchini Pizza Casserole

4 c. shredded, unpeeled zucchini

1/2 tsp salt

2 eggs

1/2 c. Parmesan Cheese

1 c. Cheddar Cheese (divided)

2 c. Mozzarella Cheese (divided)

1 lb. Hamburger

1/2 c. chopped onion

1 15oz. can Italian flavored tomato sauce

1/2 c. chopped green pepper (optional)

Directions

Preheat oven to 400.

1. Place zucchini in a strainer on a plate, sprinkle with salt and let set for 10 minutes. Then, squeeze out as much water as you can.

2. Put zucchini in a bowl and add eggs, parmesan cheese, cheddar cheese, and mozzarella cheese. Mix altogether.

3. Place in a well greased 9 x 13-inch pan. (This will be your crust)

4. Bake for 20 min.

5. Brown hamburger with 1/2 c. onions and add Italian flavored tomato sauce

6. Spread this mixture over the baked crust.

7. Sprinkle with 1/2 c. cheedar cheese, 1 c. mozzarella, and chopped green pepper.

8. Bake for 20 min. and enjoy!

New and improved!!!

Well, as you can see I have (with a bunch of help from Leanna Banana) updated our blog! This is very exciting for me, especially since I didn't know what in the world to do to get my blog to be cute! Thanks to Leanna for her expertise in the field of blog design and know-how, she got me on my way to a more well rounded blogging experience! :)

Things here have been going pretty well! I have my days of discomfort with my Crohn's still, but continue to try and hold on to the light that someday down the line I'll be having lots of carefree "eat-anything-I-want-and-never-regret-it" days! Wait...is that reality? I think we all have those days where we say, "I can't believe I ate the whole thing!" The future looks bright more than bleak as it used to. I love saying, "I feel great today!"

Just yesterday I went to my friend Camille's baby shower where we made onesies! I drew the biggest blank for anything creatively inspiring for about the first half hour, but then sheer brilliance began to flow out of me at about 7:23 p.m. :) I came up with a cute little bikini idea! Yes, because it's a onesie it is definitely modest. I think I should come out with an adult line. What do you think? Then the world could still get the bikini look, but without all the skin! (lol) Where do I come up with this stuff??? Perhaps I was meant to change the world one bikini onesie at a time!

Let's see here...I think I should definitely talk about Parker! He is doing really well, despite the economic slump we are all apart of, work has been fairly busy. Not as busy as we hoped it to be, but busy enough to be able to keep our heads above water in getting our bills paid etc. We are quite the budgeters! Parker has also delved into the world of online survey taking! It gives us a little bit more income...but then again I must emphasize the word little. :) He is studying hard, working hard, and playing hard too! I'll keep you posted on when he gets his instructor's license!

I think that's it for now! Till next time... Ciao miei amici!

Long time no blog!!!

Oh, dear! I have offically given myself the worst blogger ever award! Yes, it's true. It's been a really long time since I have updated you all! Well here it goes...(drum roll please)...

This is the first week that I have actually felt semi-normal since the time I started those terrible minerals! It has sersiously been a miracle. Perhaps the miracle I have long awaited for. It's been an emotional thing for me to get through. A rollercoaster is what can best describe my health from the time this all started back in July of 2008. I've lost 20 lbs. Most of you would agree with me on the matter that I really didn't have that kind of weight to loose in the beginning! Yep, pathetic. Now I'm just trying to gain it back so that my body can function healthy enough so that I can have the option to start a family in the next year or so. I hope sooner.

Having good health is one of those things in life that you truly would give anything for once it's been taken from you. This trial has been such a growing experience for me and Parker. My relationship with my Heavenly Father and Savior has grown a bunch, in ways I am so thankful for. You never know what you've missed out on until you "see the light" and realize you don't know how you've managed so long with out that knowledge of life or closeness to heaven. I'm just so thankful to be feeling better. I know I couldn't be at this point had it not been for the many prayers and fasts that you all have done for me. I'm not out of the woods yet, but feel I'm closer than I have been for a long time. Thank you all for loving me and keeping me in your prayers. Your prayers have been answered.

I have to run, but I'll fill you in on more later...I promise! Don't worry it won't be months from now either. :) Write again soon!

Minerals to miracle?

Well, here I am still on my minerals...and still hoping! I have gone through what has seemed like some of the hardest days of my physical life. I know Heavenly Father has been helping me through this- along with my mom. My family has been so awesome! Parker of course has been a HUGE blessing too!!! He has taken such good care of me. The Lord's hands have been both visible and invisible in these hard times. Jerrett and Ilonka came up to see us a weekend ago, and it was so great to see them! Ilo made us a true Dominican dinner to which I have to give a scumptious five stars. It was delicious. Parker gave raved reviews also! Thanks Ilo and Jerrett!

Here's a little more info on the minerals. I am on the final stage of my mineral experience, and it has so far been the most kind to my body. I am now getting rid of all the viruses, bacteria, heavy metals, etc that have been in my system. They are being released and washed out. These minerals are a bit stinky, like the smell of chlorine bleach. Yuck! I have to mix them with some juice. This will go on for about 11 more days, taking higher doses as the days pass. Then after all that my Crohn's will hopefully be gone forever! Yipeee!!!! Then I will jump and sing and perhaps do a little jig if the mood is right...who am I kidding you all know I'll be doing jigs deep into the night! Perhaps you'll join me? :D

Well, better run. I'll write again soon.
My love to you all!
